Our nihari began in a walled-city kitchen in Lahore — one pot, eleven hours, a recipe written by hand and guarded by three generations.

Meat is hand-minced at dawn, masala stone-ground in-house, and every skewer meets real charcoal — never gas, never shortcuts.
